Moroccan recipes:Almond Sellou

Sellou or sfouf is a nutty, delicious confection of ground almonds and sesame - flavored with anise and cinnamon. It’s traditionally served during Ramadan, celebrations to mark the birth of a baby, weddings, and other special occasions

What you will need :

 
  • 200 grams of flour
  • 125 grams of roasted almonds 
  • 100 grams of sesame seed
  • 125 grams of honey
  • 75 grams of powdered sugar
  • 1 ½ teaspoon of anise powder
  • 2 teaspoons of cinnamon powder
  • a pinch of salt
  • ¼ teaspoon of ground mastic gum
  • 113 grams of butter (1 stick)
  • Secret Ingredient 1: 125 grams of roasted peanuts
  • Secret Ingredient 2: ½ teaspoon of cardamom powder

 

 

Preparation

Start by frying the blanched almonds in vegetable oil, then roasting the flour and sesame seeds in a skillet on medium-low heat.

 

Use a food processor to mix both the roasted peanuts and almonds together 

 

Mix the dry ingredients together (flour, sugar , spices, sesame seeds, almonds, and peanuts);

 

Add the melted butter and honey, mix well using both hands.

 

Serve and decorate with powdered sugar and roasted almonds.
