Amlou, also known as the Moroccan almond butter, is a magical concoction of Argan oil, honey and almond paste that was created by the Amazigh people in the Sous region of Morocco.

How is amlou made?

Amlou is still being made using traditional methods, usually by women’s cooperatives. The almond would be toasted before being grinded with pure Argan oil using a stone mill. This produces a smooth liquid to which organic honey is added.

Nowadays, new varieties of Amlou are being produced with different flavors, such as Chocolate and Pistachio.

It’s important to note that Amlou has traditionally more of a liquid consistency than a paste-like one.

How to eat amlou?

Amlou is typically served for breakfast or afternoon tea with bread or Moroccan pancakes like Baghrir, Msemen, Mlawi, or even Harcha.

This sweet dip (or spread) is also traditionally eaten during weddings, and it is also widely used as an aphrodisiac.
