Preparation
Cook the whole potatoes with the skin on in boiling water. Once cooked, let them cool and then peel them. then, crush the potatoes so as to obtain a fairly smooth mashed potato. | |
Add the eggs, salt and pepper, cumin, finely chopped garlic and chopped parsley. Then mix everything well. |

Then, using a spoon or by hand, form a medium-sized ball of mash. Roll it in flour then flatten it to form a pancake. |

In a frying pan, pour frying oil. Once hot, add the pancakes. Cook for 2 to 3 minutes on each side to obtain a nice golden color. Once cooked, place the patties on absorbent paper to remove excess fat. |
